Ingredients
Sooji (semolina/rava) – 1 cup
Milk – 1.75 cups
Pineapple juice – 0.75 cup
Sugar – 1 cup
Cashew – handful
Almonds – few
Raisins – handful
Saffron – few strands
Cardamom powder – 1 tsp
Pineapple – 100 gms (finely chopped)
Ghee – 50 gms
Lemon color – a pinch Salt a pinch
Method
- Roast the cashews and raisins in ghee, add the pineapple, sauté and keep aside.
- In the same pan, dry roast the sooji and keep aside.
- Add milk, pineapple juice, sugar, saffron, cardamom powder, lemon color, salt and mix on low heat.
- Add the roasted sooji (in small quantities), ghee and keep stirring, until it reaches the halwa consistency.
- Add the roasted items from step 1 and mix.
- Add the halwa in a mould/dish lined with ghee and few chopped pineapple. Rest for some time and flip over.
- Add sliced almonds on top to garnish. Place candle(s) etc. The cake is ready to be cut.
