Makes 15-18

Ingredients

Chicken (minced) – 500 gms
Egg – 2
Bread crumbs – 2/3 slices
Ginger – 2″ piece
Garlic – 8 pods


Green chilies – 3 medium
Potato (mashed) – 2 big
Onion – 1 big
Fennel seeds – 1 tsp
Pepper corn – 1 tbsp


Coriander leaves – 1 hand hold
Turmeric powder – 1 tsp
Chili powder – 1 tbsp
Garam masala – 1 tsp (optional)
Salt as per taste

Method
  • Sauté the chicken with finely chopped ginger, garlic and green chilies. (Please remove all excess water.) Keep aside.
  • In a mixing bowl, add the chicken, mashed potatoes, finely chopped onion, fennel seeds, crushed pepper corn, finely chopped coriander leaves, salt, turmeric, chili powder and garam masala. Mix all into a good dough like and make the cutlets.
  • Beat the eggs with a pinch of salt, dip the cutlet, coat with bread crumbs on all sides and fry them in oil.
Tips
  • Place the cutlets in the fridge for 30 minutes, before you fry.
  • They can also be stored in deep freeze, for fry later. Just thaw before use.
  • Vegetarians can replace chicken with beans, carrots, capsicum, peas etc.
